We use fresh botanicals—never dried—which are wild from the mountains around the distillery. They are then placed in the still within hours of foraging. Each one is sustainably foraged by our wild foodie, Geraldine Kavanagh. They are then slow-distilled to tease out delicate flavours by our obsessive stillman, Rowdy Rooney. Tiny batches of less than 250 litres are distilled with cut-points decided batch by batch—by smell and taste—never automatically.
Look for subtle fennel, licorice and sage notes on nose and palate, with a gentle, refreshing exhale that hints at lemon and lime peel. It is “foraged from what grows in the mountains,” says the producer of this Irish gin’s botanicals.
